Once bolognese sauce is cooked you can keep it in the fridge for two days in a sealed container. There is the possibility that it would be fine for three days but to be safe it is better to consume it within two days. If you want to consider freezing bolognese sauce, you should freeze it immediately. It is not recommended that you keep it in the fridge for two to three days and then freeze it as you may take it out of the freezer and then eat it a day or two later. The bolognese would then be five days old and could make you ill. It is extremely important to keep it in a sealed container when in the fridge or freezer. You could put it in a tightly tied sandwich bag if you do not have a suitable sealed freezer safe container.

Bolognese sauce is an Italian meat based dish that is usually served with spaghetti. In recent years bolognese has also been served with jacket potatoes. For a traditional bolognese recipe you will need the following ingredients:
225g/8oz minced beef
2 tablespoons olive oil
1 onion, peeled and finely chopped
1 carrot, peeled and finely diced
1 green pepper, seeded and finely diced
1 clove garlic, peeled and crushed
1 tablespoon of mixed dried herbs
400g/14oz tinned tomatoes
150ml/5fl oz red wine

Using a large pan you will need to cook the onion and the vegetables and when they are soft add the minced beef. Add the rest of the ingredients once the meat is cooked and season well. Leave the sauce to simmer gently for about half an hour to fifty minutes to allow the flavors to develop.

It will be ok for up to five to seven days, but no longer and remember you can always freeze it as well, and will last you a lot longer.

I wouldn't keep it or freeze it if it is more than 3-4 days old.

You have to freeze the sauce soon as it is cooled if you want to save it this way. In the fridge I would not keep it more than 24-48 hours.
