Well i found a site with directions never done it myself...  Roast covered for 45 minutes to 1 hour (depending on size of bird) in preheated 400° F Oven. No need to baste. Then reduce oven temperature to 325° F., cover pan and continue roasting. www.roastgoose.com

It depends on the size of the goose, but basically, you cook them just like any fowl, follow turkey instructions, or you can go to www.foodnetwork.com and you should be able to find it there. Hope this helps you out.

I cooked a 15 pound turkey at 325 degrees for 3 hours.  It did not have dressing in the bird (I cook mine in a separate pan).  You would have to add more time if the bird is stuffed.  Hope that is helpful to you, I am sure it would not matter if it was a turkey or goose.  Enjoy!

Actually, I have found most of the online guides to be WAY too short in the time listed. It takes a long time to roast a large goose.

It does depend on the size.

Another thing, geese produce a LOT of grease, which can be saved for cooking. I like to roast goose without seasoning and pull off the oil with a turkey baster and keep it in the fridge. I doubt I will ever have to buy cooking oil again. It's a very fine quality oil. And no, there isn't a strong flavor/scent to it. It's just very white and clean.
