Dark, leafy greens are your easiest source of vitamin K.

One way I always remind myself of what food to eat when I need vitamin K is that Kale, starts with a K... And Kale is very high in vitamin K! Of course, kale is also oh-so-very "in" right now, so it's not that difficult to find in most grocery stores.

Other dark greens that are high in vitamin K:

  • spinach
  • bassil
  • brussel sprouts
  • asparagus
  • leeks

Other foods like olive oil, soybeans, and chilli powder are also good sources of vitamin K.

But really, if you're looking for a super boost, dark green vegetables are your best bet. A simple way to get that boost is to throw some kale or spinach in a soup or stir fry. Do so only in the last couple of minutes of cooking as it doesn't take long for the leaves to get wilted, especially for spinach.

Kale is without a shadow of a doubt the best food to eat for your daily vitamin K needs.

There are, however, plenty of other foods that are rich in vitamin K, and I've listed them below.

  1. Spinach
  2. Broccoli
  3. Brussels sprouts
  4. Cabbage
  5. Asparagus
  6. Green beans
  7. Basil
  8. Rhubarb
  9. Seaweed

Benefits of vitamin K

Vitamin K is an important vitamin that helps in the healing process by assisting in blood clotting.  It also helps to build strong, healthy bones.

The great thing about vitamin K is that it's stored in the liver, so if you consume a good amount of it one day, your body can make use of it at a future date.  This also means that most people don't need to supplement vitamin K, as they can get enough of it through a healthy, balanced diet.

Here's a short video documenting some of the more important factors about vitamin K's role in the body:
