I actually prefer a good Swiss cheese myself. American is good but it's all processed junk.
I like a mixture of cheeses. I usually make it with swiss, provolone and American because that is usually what I have in my fridge. One restaraunt near where we used to live had a six cheese grilled cheese. It was gooey deliciousness!
