Would it be possible to generate more animal protein by farming cats than by breeding cattle? Is the human race missing out on a valuable food source?

No.

Cats are obligate carnivores. So you would have to grow many crops to feed the many animals needed to feed the cats, thus compounding the problem not ameliorating it.

This does not even take into effect the howls of cat lovers everywhere!
