I have been known to put calendula petals into salads- mostly for color accent. Same for nasturism flowers, and the nasturism buds for the peppery taste.

Yes eating the flowers was one of the phases I went through...used to find ways to put 'em in everything...did you know that day lilies are edible? They have a nice sour taste, like sheep sorrel and sour dock.
I would drag the whole long-suffering circle of family and friends out each spring to harvest wild violets...have you ever eaten wild violet jam? Or homemade rose petal jam? Heavenly.
