During digestion, the body breaks down protein, carbohydrates and fats, in that order. Fats produce twice the amount of energy that carbohydrates and proteins are capable of producing.  Eat Healthy fats and chances are, you will intake a substantial portion of protein also.  
Fruit contains simple carbohydrates, which the body can break down quickly and convert for short term usage, while vegetables contain complex carbohydrates.  These require longer time to be converted to energy by the body. This slower absorption allows for more time for the energy to be used, resulting in less energy being stored as fat.
