"hollow heart" is a discolored hole in the center of a healthy potato.  It is caused by over-watering.  You can dig it out and eat the rest of the potato.  Irregular watering causes misshaped and knobby potatoes.
Potatoes need full or partial sun and a loose, well-draining soil that is not too rich.  A soil pH between 5.0 and 5.5 with liberal amounts of fertilizer and a steady water supply.

To prevent potatoes from discoloring, dip fingers in lemon juice before chopping. This should keep their color intact and even provide taste.
