No acknowledgement is required however people like to know their gift is appreciated. A short note thanking them and telling them you enjoyed their company will solidify that friendship.
I don't think you have to write thank you notes for bottles of wine.
It's sufficient to have thanked the bringers of the wine at the time. Most people take a small gift such as wine , after dinner chocolates or such like to a dinner party.
If you received additional gifts you might want to send thank you letters.
If you really feel that you want to thank everyone why not compose a short note thanking everyone for coming along and say how great it was to see everyone and how much you enjoyed their company and gits etc. You can print off enough copies to send to everyone.
