I would cook them before, leaving them uncooked might alter the taste when you defrost them. That way the "maza" from the tamale won't become soggy after defrosting them.
Should tamales be cooked before freezing?
My mother does not cook them , when she is ready to eat them she boils them for I think 20 minutes ...
