I make my own as well, I use a cast iron 12 inch and 2 inch deep , but after it bakes , it rises to around 3 inches deep, I buy mozzarella that I grate myself (and I'm not Italian).
But buy my sauce from a old guy who is, and makes the best sauce anywhere... He uses real tomatoes.
I thought that was odd, didn't know that practically all tomatoes are hybrids, his come from Italy.
And you can taste the difference and see the difference. Even produce stands you think are real tomatoes are imposters.... (for the most part).
