Soft wrap, egg, cheese, bacon, sausage and potatoes, yummy.
Sausage, egg and cheese with a good taco sauce on a flour tortilla, fried golden brown on both sides. I make them a couple of times a week.
I'm with echooos on this one....I don't enjoy my breakfast smooshed together in a taco or tortilla....eeeeyuck!
I saw on Pinterest where there was a large recipe for breakfast tacos and one guy made 20-25 breakfast tacos at one time and he wrapped them up in Saran Wrap and froze them.
Then when he is getting ready for work, he zaps one in the microwave and it's ready to eat with his coffee when it gets done brewing .
I may do that, but I am allergic to too many eggs but I could put a little scrambled eggs in one. But here's an interesting recipe:
• Boil two sweet potatoes, peel and dice into 1/2 to 1 inch pieces. Set aside. (Much healthier than regular potatoes and adds a bit of sweetness and good fiber)
• grate your favorite cheeses...my daughter in law uses dots of cream cheese in hers and it's so good.
• cook your favorite breakfast meats such as sausage and bacon. Bacon cooked in the oven on draining pan for 30 minutes is delicious and the fats drips away so it's healthier.
• add salt and pepper and any other seasonings that you like such as a bit of garlic powder... But I like Beau Monde seasoning. It's amazing. Also some chili powder would be good if you like that.
• a spoonful of jalapeño pepper juice would be a good addition .
• mix everything you've cooked with plenty of scrambled eggs and fill 20-25 six inch soft taco shells (or the larger soft tortillas if you want) and roll up and cover well in Saran Wrap so you can microwave it. (Don't use foil in microwave.)
• freeze and heat one up daily for a breakfast or snack.
