SEVEN MINUTE FROSTING

1/2 cup of water
2 cups of sugar
4 egg whites, let them set until they are room temp.
1/2 tsp. Vanilla

Cook sugar and water until it reaches the soft ball stage. (Test this by putting a drop into cold tap water.) Remove from heat. Beat egg whites until they start to peak. Add water and sugar mixture slowly to beaten egg whites while continuing to beat. Then add vanilla.
This frosting is great on a yellow cake sprinkled with coconut after frosting.
Variation: Take juice(coconut milk) from one coconut and add 2 T. Of sugar to it. Heat until sugar is melted. Sprinkle this over the layers of your cake before frosting.
