I don't think the light has anything to do with it, as the light turns off when the door is shut. Apple slices naturally turn brown when cut, as do potatoes. Perhaps the refrigerator speeds up this process.

I never heard of the refrigerator making Apples and Potatoes brown it could be they were kept too long.
