Vegan Cheesy Pasta Recipe
Hey all my beautiful vegans, I thought I'd share one of my go-to cheap and easy recipes for you all to enjoy!
Vegan Mediterranean "cheesy" pasta
SAUCE:
>>> 1 capsicum
>>> 4 tomatoes
>>> 1 onion
>>> 2 cloves of garlic
>>> 1/2-1 cup nutritional yeast (depends how creamy you want it)
>>> 1 cup cashews (soaked)
>>> 1/2 cup nut milk of your choice
>>> 1 teaspoon Himalayan salt
>>> Pinch of pepper
>>> 1 teaspoon paprika
>>> 1 teaspoon basil (or any herb of your choice)
Oven roast all the vegetables until nicely charred
Pour all ingredients for the sauce into the blender
Blend on high until smooth and creamy
PASTA:
# 1 packet of vegan gluten-free pasta of your choice
# Cook until soft and ready to eat.
# Stir through sauce previously made in the blender.
ADD IN:
>>> 1/2 cup chopped olives
>>> 1/2 cup sundried tomatoes
>>> 1/2 chopped artichoke
>>> 1/3 cup parsley
Once the sauce is tossed through add in your olives, tomatoes, artichoke, and parsley.
