Best to do a search to find exactly what they are. There is a site called Bing.com which is more helpful than Google because Google has become so saturated with information, may take you all day and even then, most of it is adds. There is also another search engine, though not at good called "ask Jeeves". Give it a shot. A lot of companies give numbers to their preservatives rather than writting in full. As well, many products are sprayed with chemicals, and many are not indicated. For instance, cranberries are full of sulfites, as they are sprayed in the cleaning process. I am allergic to sulfites, and was glad to find this out. As well, I am allergic to penicillin, and used to eat a lot of brie and camemberg cheese, found out later that in north america, it is required by law to be sprayed. Gee then I use to wonder why these cheeses had a bad effect on me. There is also a program called "how it's made" you may want to check out their site as they will have all sorts or info there as well. Good luck in your search

Information about 471 is found here. It is apparently an emulsifier/stabilizer consisting of aluminum, calcium, sodium, magnesium, potassium, and ammonium salts of fatty acids.

Information about 481 is found on the same site here. It, too, is an emulsifer/stabilizer, sodium stearoyl-2-laclylate.
