What is a Saltata?
The term saltata refers to any dish that is made by 'tossing' the ingredients together, usually whilst they are in a pan or other container used in the preparation process. The term derives from the Italian saltare which means 'to jump'.

One recipe for a saltata is the Pasta Saltata Alla Medici. The good thing about saltata is that they are quick and easy to make and are a great way to use all the leftover pasta that you might have sitting in your refrigerator from the night before.
Start by melting butter in a frying pan, sautéing garlic, parsley, chopped mushrooms, and turkey breast (making sure the turkey breast is fully cooked).
For seasoning you can add the obvious salt and pepper, and a dousing of white wine. Allow this to simmer before transferring to a bowl. Then add white-truffle cream and a generous helping of whipped cream before folding carefully. Finally add the pasta and toss gently and enjoy!
