If you leave out the flour, it becomes a sticky soup because cookie's main structure is flour. Without baking soda, it doesn't make much of a difference, but since baking soda is a leavening ingredient, it doesn't rise as much. If you leave out sugar, then it doesn't taste as sweet, is lighter in color, and gets puffier. Leaving out flavorings, like salt, vanilla, etc. Then it just effects the taste. It's a very minor change though. Leaving out butter and eggs don't allow the batter to stick together and the batter is all crumbly. Hope this helps :)

It depends on what you omit out of the cookie. If you omit the sugar or flour then the cookie will turn out to taste totally different but if you just take out a minor ingredient, then it will not have such a BIG impact. :]

Totally depends on what you omit, if you just omit the choc- chips, then not much effect, however if you miss out the sugar, BiG effect.
