One recipe is as follows. This is a gluten-free cranberry and coconut cookie recipe. For this recipe, you're going to need gluten-free baking mix, sugar, butter, orange zest, vanilla extract, fresh or dried cranberries, coconut flakes, cinnamon, salt and an egg. Quantities can be found below:
To start you need to put the butter, orange zest, vanilla and the egg in a bowl with the sugar. Stir the mixture round until you have a complete and thorough combination. Then, you need to add this mixture slowly to another large bowl. This bowl needs to already have the cinnamon, salt and baking mix ready and mixed inside of it. Constantly stir as you are adding the mixture. Once it's all in the bowl, you need to stire gently until everything is completely combined. Once you have a nice dough, you can add the cranberries. Dried are recommended, but for a sweeter and fresher alternative you can always use fresh berries.
Once you have the right consistency of dough and all the ingredients have been combined, it'll be ready for the oven. The oven needs to be preheated to around 350 degrees F. You will need to freeze four baking sheets to make room for all of the cookies, as this is a large order of cookies. The dough then needs to be rolled with a rolling pin quite firmly, and then cut into between 50 and 60 balls. They all need to be around 1 or 2 inches in size. Put them all on the sheet and then bake in the oven for only around 10 minutes, until they all look done.
Then, wait for them to cool and serve!
