If your dish recipe
consists of meat and vegetable, then cook the meat first keep it aside. When
the vegetables are almost cooked, add the meat back. This ensures that the meat
is not overcooked, and retains its flavour.
The best tip that I have read is this: while stir-frying add food to the wok in this order: Aromatics (garlic, ginger, chiles, etc.), meat or seafood, then vegetables with a sprinkling of water for steam.
