I have fresh kale. Suggestions for what to do with it?

It's the tastiest salad green I know, especially crinkly kale. But if you're having it in salads, I'd take out the centre stem.

And in just over an hour from now I'll be having lunch of pizza with a kale salad.

So many good ways to cook it ! This should help you to decide. It's awful good !

    Place the chopped kale in a steamer basket. Bring 1-2 inches of water to a boil in a large pot then carefully place the steamer basket into the pot. Cover and cook for 5-10 minutes, until kale is just wilted.Feb 6, 2014

I like to slowly fry it in butter, a little salt and garlic pepper and eat it on some good bread.

BAKED
RIGATONI WITH SAUSAGE, BUTTERNUT          SQUASH AND KALE

(Mountain
Democrat 2009)

INGREDIENTS:

1-1/2
pounds butternut squash peeled and cut into 2-inch chunks

1
tbs olive oil

6
to 8 springs fresh thyme

Coarsely
ground black pepper

Salt

1
lb Italian sweet sausage

1
tsp fennel seeds

1
bunch of kale, washed tough stems removed and roughly chopped

cloves garlic, chopped

oz uncooked rigatoni

cups half-and-half

½
cup low-sodium chicken broth

1-1/2
cups finely grated Pecorino Romano cheese

½
cup breadcrumbs.

PREPARATION:

  1. Preheat
    oven to 400 degrees.  Bring a large pot of water to boil, and
    lightly oil the 9x13 baking dish.

  2. Toss
    together squash, olive oil, thyme, ¼ tsp salt and pepper.  Spread
    on a large baking sheet.  Roast 20 to 25 minutes until squash is
    tender but not mushy.  Discard thyme

  3. Place
    sausage and fennel in a large dutch oven, cook over medium heat,
    stirring frequently to break up sausage.  Cook until meat is no
    longer pink.  Remove and drain most of oil

  4. Return
    dutch oven to heat,, lower heat to medium.  Add kale and garlic to
    Dutch oven.  Saute until kale is wilted (3 – 5 minutes)  Add ¼
    tsp salt and pepper.  Turn off heat and return sausage to pan. 

  5. Reduce
    oven temp to 375 degrees.

  6. Cook
    pasta in boiling water for 2 minutes less than package directions.
    Drain well and toss with sausage, squash and kale.  Add
    half-and-half, broth, and ½ the cheese. Gently toss again. 

  7. Transfer
    to baking dish, top with bread crumbs and remaining cheese.

  8. Bake
    25 minutes, until thoroughly heated and crusty on top.  Serve with
    additional chee

Chopped kale is a great addition to any soup.  I make a soup with chicken stock, chick peas, lentils and kale with Moroccan seasonings.
