Otis's Taco Tuesday got me thinking about all the fillings and styles of tacos. How do you like your tacos prepared?

I make Taco Ritas.

I fry a flour tortilla and lay on a cookie sheet, fry up a corn tortilla until it's crisp and lay that on top of the flour tortilla. On top, I put chili con carne made with refried beans, not kidney beans. On top of that, I put another fried flour tortilla topped with a lot of taco meat, prepared with taco sauce, cumin powder, etc. Then I load it up with shredded cheddar Jack, shredded lettuce and chopped tomatoes. Toss in the oven for about 10 minutes and top it off with a big plop of sour cream.

Okay, I know this is weird but if I make Tacos at home this is how I make mine. Corn tortilla, lightly fried on both sides, ground beef, cooked with onion and garlic, extra sharp cheddar cheese, chopped tomatoes, and ketchup. I've been eating this home Taco in this exact way since I was a very small child.

We never have tacos.  My cooking background is mostly American and Italian.  We just never got into having tacos at home or out.  I do realize that's very unusual though.
