Certainly, they freeze up quite well, but cover them and chop them and get them combined with the liquid quickly as they start to discolor if left too long out exposed to the air even once cooked.
I usually do not add all the ingredients, I reserve the grated cheddar cheese for the top, and some fresh parsley chopped fine.
I then beat up a fresh organic egg with half a pint of cream and a little milk
And pour it over first, then add cheese and parsley, and pop it into a very hot oven 250 for about 10 to 15 minutes or until the liquid is bubbling and the cheese is melted and crispy.
Nobody said this was a slimming side dish to serve with your main course, but it certainly is nourishing and you won't have any left over.
I also make this as a one pot meal when there are just the two of us. I take it out, and then add cheese and parsley, then put it in the oven for the 10 to 15 minutes, and when it comes out add some crumbled bacon that I have done in a non stick pan, till crispy, and then set on paper to drain, this is a very hearty meal, and served with a crisp salad is all you need.
