Select Peppers that are fresh and in good confition. Do not select soft or bruised peppers. Wash each of them thoroughly, then remove their seeds. Its usually better to cut them into pieces that you later require. In order to preserve them in their fresh state, put them in boiling water for a few minutes and then freeze them. I like to freeze  all my veggies fresh.  I do not boil.  Then I defrost them, they are much harder then if I boiled them . See if that works.
