You have to blanch them, in other words put them in a steam pot for about five minutes or in boiling water for about the same time, then immediately put them in ice water, and just freeze. You can leave them whole, without the seeds of course, or dice them for later use in recipes. Hope this helps.
I have always just cut mine up and put in the freezer.I don't blanch them. Wrap in freezer paper. They will keep3-4 months
Cut the peppers into chunks or strips, remove seeds, wash, drain & place in a freezer bag.
