First,pick out any beans that have brown spots or broken,and pick out any twigs,leaves,etc.Next, if they are string beans (like half-runners etc.) you string them usually start at the top and pul the"string" down on each side. Next brake the bean into 3 or 4 parts. Next put the beans in the sink and rinse well. Place in a large pan and cover with water about 1" above the beans, add about 2Tbs. Of bacon grease,one med. Whole onion,1Tbs. Salt. Bring to boil and reduce heat and cook uncovered for about 2 hours,add water when needed, keep water above beans
I cook my fresh green bean for three hour. Add water as needed.

I like to take the beans and snap the ends off, while I'm snapping the beans I bring the water to a boil, add the beans, a ham hock, 2 tblsp of bacon grease, a little salt, a little tiger seasoning, half an onion, once I get the beans boiling, take turn em down to a good simmer and let them bad boys cook low and slow for about 2-3 hours and check water level every now and then. Make sure the ham hock is a smoked hock,,ENJOY!!!
