Do I Just Add Water To Winco Bulk Pizza Dough?

One of those little packets of active dry yeast is sufficient for 3 1/2 cups of pizza crust mix along with 1 cup of water.  Follow the directions on the yeast packet to "activate" the yeast before you mix it in.  Let the dough rise for at least 1 hour.  Those measurements were the directions listed on the recipe Winco has in the bulk aisle.  I usually mix in 2 tbs of Winco's pizza seasoning (also found in the bulk foods aisle) after the dough has risen to give the crust some flavor.  

Some Tips:  
-Sprinkle some corn meal on the bottom to prevent sticking after constructing your desired pizza shape
-Use a pizza stone if you can because it absorbs the moisture and leaves a pizza crust that is AMAZING!!
-The recipe is sufficient to make 4 -12in thin crust pizzas.

I was just looking at this in the bulk section today and I noticed it requires yeast.  Didn't see how much though.

After mixing the ingredients per the recipe, should I leave it in a bowl and cover it?  Or should I put it on a plate and let it rise on a plate?
