If you're serving it along with an entree and/or other vegetables, here's one option:
Buy 2-3 lbs of Spring Mix (mixed greens), and 4 heads of Romaine lettuce (they often come 5-6/bag at a special price. Add any of these: Peppers, baby carrots, celery, red onions,
