Preservatives are used to increase the shelf-life of cakes. Besides the preservative that you use, the shelf life depends upon the type and quality of the materials you use in the cake, especially the type and quality of the oil really matters. Other than that the baking conditions, packaging, storage conditions, and any modifications you do to the actual recipe also has an impact of a cake’s shelf life. Usually PentaCake and Sobrate are used as preservatives in cakes. PentaCake is added in the cake for volume. Softness, texture, humidity etc. So Sobrate along with PentaCake is used as the PentaCake makes the sobrate more effective. The lesser sobrate you use, the shorter the shelf-life for the cake would be. The concentration that you use would depend upon the amount of materials of your cake.

The shelf-life depends on the conditions mentioned above but if the conditions are optimal, the shelf life would be between 3 and 9 months.
