A beef casserole works best if you limit the type of vegetable that you use. Some people use all sorts of scraps of vegetables up in a casserole but this can result in some very strange flavours. Never put broccoli or cauliflower into a casserole… the smell lasts for days.

Start by choosing a good cut of steak for the casserole, large pieces so that you can cut them to the size you prefer. Bite size cubes are best but remember to trim off visible fat to make this a healthy casserole.

Fry the beef in hot oil for a few minutes and put on one side. Then, use the juices to fry a diced onion and some sliced mushrooms. Layer the browned meat and onions and mushrooms with some sliced carrots and potatoes cut into pieces about twice the size of the meat cubes.

Distribute all the ingredients evenly and then use a bought mix such as a Colman's casserole mix. For four people, you will need two sachets. Open and mix with water and pour over the casserole and cook slowly – at about 140 degrees Celsius for at least 2 hours.

Do u have to cook the carrots and the potatoes before putting them in the oven with the beef?
