This is advisable if the gammon is very salty, but if you are short of time there is a shorter method which works very well - you pour boiling water over the gammon, then drain it and replace with fresh cold water. This boils off a lot of the salt.
I like to do this a few hours in advance, and then soak the gammon in cider or red wine before cooking - there are some lovely recipes from Nigella Lawson and Delia Smith.
