I am just strangely surprised there is someone who remembers the Lazarus stores, given they have been gone a while and they were regionally limited. If I recall correctly, the downtown store had several in-store restaurants and, indeed, they had some gourmet specialties.
Unfortunately I have no recollection of any Popeye's Olive Cheese Spread. A search on google turns up nothing specific. However, in general you can search google for "olive cheese spread" or "pimento cheese spread" and find a pattern. Many such spreads involve cream cheese and perhaps some mayo. You can get creative with olives. Back in the day, the only olives available were Spanish-pimento and canned ripe. Now there is a wider selection of Greek and other mediterranean olives. My wild guess is that a spread called "Popeye's" may have had spinach? Perhaps get some fresh spinach, chop and bruise it and add it to any mix you find.
