This recipe was found online. It may not be the correct one, but it is the only recipe we were able to find that stated it was Pappadeaux's Lump Crab and Spinach Dip.

You take one 16 ounce bag of chopped spinach, fresh or frozen, add in a half cup of butter and one pound of lump crabmeat. Combine a tablespoon of flour, four ounces of Monterey jack cheese, four ounces of Philadelphia cream cheese, and three fourths of a cup of half and half. Also part of the recipe is a half teaspoon of white pepper, a teaspoon of salt, a quarter teaspoon of ground cayenne pepper, and then three fourths cup shredded cheddar.

Add it all together in a baking dish; once the butter is melted, the spinach thawed, and the crab is carefully sautéed. The oven should be preheated to 350 degrees C, so that when all ingredients have been cooked, melted, and mixed you can cook the dip for ten minutes to melt the cheddar cheese.

You just have to cook the crab meat in the butter for three minutes and stir in the flour, then the cubed cheese and cream cheese. Add in the half and half and let it boil. It is a fairly simple recipe and hopefully it is the one the asker of this question is looking for. There are other crab and spinach dip recipes out there that may be more accurate regarding the restaurants recipe, but this one says it is Pappadeaux's.
