Easy peasy strawberry shortcake..   Base:1 2/3 self rising flour , scant 1/2 stick butter diced plus bit xtra for greasing, 1/4 super fine sugar , 1/2 to 2/3 cup milk..
Topping: 4 tbsp milk, 1ib 2oz mascarpone cheese or cream cheese.. I like mascarpone better. Its italian cream cheese.. Usually in deli area with fine cheeses. 5 tbsp fine sugar, 1ib 2 oz strawberrys hulled and quartered finely grated rind of one orange..

Preheat oven to 400f/200clightly grease 8 inch 20cm cake pan. Works best with loose base pan.. Not a necessity.
To make the base, sift flour into large bowl, add butter cubes and rub in with your fingertips until the mixture resembles fine brreadcrumbs. Add superfine sugar. Stir in enough milk to form soft but smooth dough. Gently press dough evenly into prepared pan. Bake in preheated oven for 15 to 20 minutes or until risen firm to touch and golden brown. Let cool 5 minutes in pan then remove and let completely cool. ( it will look like a big cookie) don't be afraid.. Its good.
To make topping beat milk and mascarpone together with 3 tbsp of fine sugar untill smooth and fluffy. Put stawberries in seperate bowl sprinkle with remaining sugar and orange rind.
Spread mascarpone mix over scone base (the big cookie thing) pile strawberries on top spoon over any left over juice in bowl friom strawberries. Scatter mint leaves on top sprinkle entire cake with confectioners sugar. And you r done. Easiest cake I ever made and delish. Enjoy
