This all depends on the type of cake you want to make. For example you can get a plain eggless sponge cake. This is exactly the same as a Victoria Sponge just without eggs. As far as cakes go without butter you pretty much need some type of fat when making a cake no matter what kind it is. Some cakes use butter or margerine,and you can even get cakes which replaces the butter with oil. For example I once made a delicious Carrot Cake. This did not contain butter, but it contained oil.
