Yeast is a kind of bacteria.  It reproduces very fast.  When it is mixed with bread, the bread rises as yeast makes it bigger.

Yeasts are microscopic organisms.  When added to the bread dough, they cause fermentable sugars in the dough to release carbon dioxide.  The gas makes the dough expand or rise.
