Pumpernickel bread is a type of bread with German origins. Hence it is also known as German pumpernickel bread. It is a kind of bread prepared out of sourdough. Sourdough breads usually have a tangy taste which is caused due to the presence of lactic acid and acetic acid in the dough. Pumpernickel bread is made of ingredients like rye flour and rye meal. This type of bread is actually a preparation common in the Westphalia region of Germany.

It was initially known as black bread due to its dark colour and was mentioned for the first time in a written manner during 1450. There are not much mention to the reason as to why and how this bread came to be known as pumpernickel bread. This bread is rather coarse in texture and takes a long time to bake properly. The long baking hours are responsible for the dark shade of the bread. It can either be the colour of dark chocolate or even black.
