You can make caramel frosting with evaporated milk
2 c regular sugar, 1/4 tsp salt, 3/4 cup evaporated milk boiling in pan med flame.
Cook until boiling stirring often (about 10min)
In seperate cast iron skillet melt 1/2 c of regular sugar
After sugar melts (5min)
Slowly combine milk mixture with melted sugar stir in.
Get a glass of room temp water
drop a drop of mixture in water when it forms a soft ball on the bottom remove from heat.
Pour in a bowl with 1 1/2 tsp of butter 1tsp of vanilla stir to desired thickness
Spread on cake or pour on apples

I make it from sweetened condensed milk - if using evaporated milk you need to add additional ingredients.

Oven method; Pour 1 can sweetened condensed milk into 9 inch pie plate. Cover with foil; place in larger shallow pan. Fill larger pan with hot water. Bake at 425 degrees for 1 1/2 hours or until thick and caramel colored. Beat until smooth.

Stovetop Method: Pour 1 can condensed milk into top of double boiler; place over boiling water. Over low heat, simmer 1 to 1 1/2 hours or until thick and caramel colored. Beat until smooth.

Microwave Method: Pour 1 can condensed milk into 2 quart glass measure. Cook on 50 % power (medium) for 4 minutes, stirring briskly every 2 minutes until smooth. Cook on 30% power (medium-low) 12-18 minutes ot until very thick and caramel colored, stirring briskly every 2 minutes until smooth.

CAUTION; NEVER HEAT UNOPENED CAN - years ago they did it that way but cans explode. Todays' cans are made differently but you still cannot take any chances.

Do i use the bottom of the double boiler, for the boiling of the Water? And the top boiler to pour the milk in, I'm new at This,

Carol - the boiling water in the bottom of the double boiler should not touch to the bottom of the top pot - it's like steaming. Place your milk in the top pot - keep a kettle of hot water handy so that you can keep an eye on the water in the bottom of the double boiler - you cannot let it evaporate! You must have water in the bottom. Boil the water first, then reduce the heat to a simmer. The water should be at a simmer the whole time. I hope this helps.
