Masa is the basis for the Tamale dish. It is very easy to make Masa for Tamale. Just follow the instructions below. You will need:
- 1 Pound of lard
- 1 cup chicken or pork stock
- 3 pounds finished fresh corn mixture
- 2 1/2 tablespoons salt

Instructions:
Beat the lard until it is fluffy. Add fresh corn mixture, handful at a time while still mixing on medium speed. If it is too stiff, the add stock at a time. The beat in the salt after some time. When the dough is light and fluffy add, 1/2 cup of cooled red chile and mix thoroughly. Then spread onto corn husks and add fillings.
