3 carrot, 2 large potatoes, 2 leeks, 1 onion, and 1 small parsnip.
Melt a small amount of butter or margarine - about 2 ounces - into a large saucepan with 1 tablespoon of corn flour. Add veg that has been diced into about 1& a half inch. Put into pan & and stir for about 5 mins without browning. Now fill saucepan to same level as to just cover veg with vegetable stock or plain water if you like & simmer until cooked. Add seasoning and blitz in a blender . You now have a nice thick veg soup.
