I just looked and found the first one I looked at. It is a chocolate fondant .... Are you interested? There is a lot to it and would take more than the 1,000 words we're allowed as far as the directions written, but I will at least give you the ingredients. For the fondant: Unsalted butter, cubed, 1 C.+2 1/2 TBSP; Bittersweet chocolate, chopped, 17.7 oz.; Unsweetened Dutch-processed cocoa powder, 1/3C+1 1/2 TBSP; pinch of salt; 8 large egg whites; Meringue powder (optional) 1/3 C; Granulated sugar, 1/2 C.
For the garnish: Heavy cream, whipped to stiff peaks, 1 scant C; Candied orange or grapefruit peels; Chocolate Sauce: Whole milk, 1 generous C; Bittersweet chocolate, chopped, 10.5 oz; Heavy cream, generous 1/2 C; Unsalted butter, 2 TBSP; Granulated sugar, 1/4C + 2 TBSP.
Maybe you could buy the book secondhand if you want. It is "The Best of the Best", 1999 edition, The best recipes from the 35 BEST COOKBOOKS OF THE YEAR. Let me know if I can help any other way.
