There is nothing more delicious that a plate stacked high with crispy fried chicken. Hailing from the wonderful state of Louisiana, I probably know about crispy fried chicken more than anyone else on this website (no offence!).

If you want to make crispy fried chicken just like my mamma taught me- why not use the following recipe:

How to make crispy fried chicken

First off, you're going to need the following ingredients:

  • chicken, cut into pieces (I could go for 6-8 pounds)
  • 1 cup buttermilk
  • 21/2 cups of flour
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • salt and pepper to taste
  • 2 quarts vegetable oil
  • 3 eggs

The actual recipe is pretty straightforward.
  1. Start by soaking the chicken pieces in buttermilk. This will add flavor, and also make sure the flour sticks to the chicken.
  2. Sprinkle over seasoning to taste. I like to use garlic powder and cayenne pepper followed by salt and pepper, but paprika and celery salt are also good.
  3. Dunk the pieces into the flour, then let them settle for a few minutes.
  4. In the meantime, beat some eggs together - you're going to dunk the chicken in this in a second
  5. With a new batch of flour, add cornmeal or breadcrumbs, and dunk your chicken into the egg wash and then the flour.
  6. Pan fry on a medium-high heat with some vegetable oil, making sure to turn the chicken as you go.

Crispy fried chicken can be prepared by doing the following:
  1. Mix one cup of flour, salt and pepper to taste and cayenne pepper. Keep it separate.
  2. Next combine a lightly beaten egg and a quarter cup of milk and set them aside.
  3. In a thick-bottomed vessel, melt shortening on high flame. Simultaneously wash the chicken pieces and drain well.
  4. Coat the chicken pieces one at a time with the egg and milk mixture and then dip them in the flour.
  5. Test the shortening with a thermometer and when the temperature is around 360F, add the chicken, reducing the flame to medium high. When the chicken gets golden brown, flip and do the same on the other side.

This type of chicken is ideal for a picnic but requires refrigeration if one is planning to keep it overnight.
