It is pretty difficult to get any kind of meat to your own personal taste. However, extreme care and vigilance while cooking and practice can make that possible. Here is my personal favorite recipe for crispy duck fillet. I serve it with orange sauce. Hope you like it:
Ingredients:
175g duck breast fillets, skinned
filo pastry measuring 6 inches square, 8 sheets
1 oz butter, melted
1 teaspoon sesame oilcoriander sprigs, to garnishgarlic - crushed 1 cllove
Chopped spring onions 2.½ tsp salt
Around inch length piece of ginger, grated
Recipe:Use the Mincer fillet with the mincing screen to mince the duck. Then put mentioned quantities of ginger, garlic, sesame oil and spring onions on the top and mix together with the help of a beater. Lay out the filo pastry sheets by using 2 at the same time with a coating of melted butter in between. Take quarter of the duck filling and put in the center of each sheet and brush it over with melted butter. Pull the sheets up so that it forms a bag and place on an oiled baking sheet. Preheat oven to 180 degree Celsius and place the bags into it and bake for 25 minutes. For the sauce take 1 tsp of butter and melt it in a pan. Then add 1 tsp sugar and fry to make caramel. Then add 150 ml of fresh orange juice, 150 ml chicken stock, some ginger paste, 1 tsp soy sauce to the pan and simmer for around 5 minutes. Then mix around 1 tsp of cornflour with 1 tbsp of cold water and add onto the sauce, while stirring. Let the sauce thicken and meanwhile put salt and pepper to taste. Serve the duck parcels straight out of oven with the topping of orange sauce.
