Couscous can be used in so many ways and comes from Northern Africa, in particular Morocco and Tunisia, where it serves like rice does in the rest of the word, and pasta does for the Italians. Serve it with any stew, curry or spicy meat dish, and it is great because it soaks up all the juices.
It is also good served as a salad in summer. just add olives dressing, cherry tomatoes , corn, cucumber sliced,and whatever else you can find ,with a bit of extra virgin and salt and pepper, and you have a healthy and substantially good summer lunch.
