Tough question Dan!
Nothing beats rum in a short glass, stacked with ice, and balanced out with a twist of lime. Here are my favorite rums and rum-based drinks:

Mojito
As far as cocktails go, nothing beats a mojito if it's made properly. I loved making mojitos when I used to work behind bars. My tip is to swap the soda water for champagne for added glamour and alcohol content.

I used to love Margaritas and Caipirinhas! But that was back in the days when I was young, before becoming a mommy. ;-)
Now I just stick to beer and wine. Preferences? Well, a good German beer or the Murphys Red are my top choice.
Wine? Spanish red like LAN Reserva or white Marques de Riscal (Rueda). Also "Reserva". If possible.
I might consider a change of drinks in the event of a change of scenery though!
Now I want a beer! :P

Rum with diet coke is my most favorite drink.
Unfortunately, my favourite alcoholic drinks are full of calories, so I tend to just go for vodka or white rum and Diet Coke.
If I fancy something nice, I'll usually go for:
Mojito
These are really easy to make at home, and I love getting all the fresh ingredients together. The smell of fresh lime and mint is delicious. The benefit of making your own cocktails is that you can adjust the taste until it's perfect!
Espresso Martini
These keep you awake - they have a bit of a vodka/Red Bull effect, without the horrible taste. Instead, they just taste like sweet, cold coffee.
I'm not quite sure how you'd go about making one — I did look it up online once, but the whole process looked far too complicated. I didn't have a freezer at the time, and you need ice!
White RussianThese are full of calories, but they're gorgeous as an occasional treat. Here's a picture, as modelled by The Dude from The Big Lebowski:
