When it's well done it's used for shoe soles.

Sure it is.  Just like an egg is an egg if it's scrambled, sunny side up, hard boiled or still in the shell

Consider first the transcendental nature of beef...

So yes---it retains its true nature in the cooking process.

However, to add the specific difference:  It is now also "inedible."
