Marinate! That's the best way to get a nice tender juicy steak. If there's not much time to do so, I put some oils and seasoning in a large zipper bag, poke slits in the steak with a knife, put it in the bag and knead it. Try to keep it in there as long as you can. Then use the remaining juices to pour on the steak while cooking. I like to tuck chopped green onion and regular onion in the slits of the steak to infuse the flavor. Now I'm hungry!
