To make granola or muesli bars. This quantity is for about
twenty bars.
2 cups of muesli containing chopped nuts and dried fruits
1 cup of rice flour
1.5 cups of butter or sunflower oil
1 cup of raw cane sugar
1 cup of thick sugar syrup like Tate and Lyle
1 tablespoon of bicarb.
Mix together (the consistency should be wet enough to press)
into a greased shallow oblong baking dish without crumbling, about 1.5cm thick.
Put into a preheated oven of 250 C for 10 to 12 minutes until golden then reduce heat to 180 for 5 more minutes.
Remove from oven. Leave in pan to cool. After 5 minutes you can cut into bars with a sharp knife but leave in pan to cool completely.
Should be a little chewy.
