Dark vanilla refers to the artificial liquid vanilla that comes in a dark brownish, black color. It is usually used in making cookies,chocolate sauce and stuff that will not be affected by the dark color of the vanilla. However, the Clear Vanilla is also artificially made but it is clear like water. It is used in types of food that has to be made white such as whipped cream, meringue etc.
