Milk chocolate is classed as milk chocolate when it contains at least 10% chocolate liquor, 20% milk solids, and 3.7% milk fats. It is generally mixed with vanilla, butter, cocoa, sugar and lecithin. Dark chocolate on the other hand tends to have a lot more chocolate liquor in and that produces a more bitter taste, whilst milk chocolate is smooth and sweet. Obviously both the flavours of milk chocolate and dark chocolate will vary depending upon which brand you buy and a shops own brand for example, will not taste as nice as a leading brand does. More expensive chocolate tends to have a creamier, more luxurious texture to it and a product such as 'Green and Blacks' is one of the best chocolate brands you can buy. Milk chocolate is generally mainly used in chocolate bars but it can also be found in cakes, pastries and in some desserts. Its sweet flavour makes it a popular choice whereas dark chocolate is more of an acquired taste for a lot of people.

True dark chocolate can be not at all bitter however here in the USA the big players add milk to cut the bitterness as it a whole lot cheaper then Vanilla however any milk in chocolate kills the antioxidant properties of it
